Fermentation and other food works, to practice as an experimental craft, an art discipline, an anthropological exploration where every thing matters.
Produce, quality, materials, temperature, atmosphere, time, microcosm... working with nourishment implies to work with the world as a whole, in a subtle, sensitive, endless loop. A loop which keeps on looping, and infusing, inside of our bodies.
That work is slowly leading the path to a wider reflexion about the concept of culture, fluidity, interconnection and divesity.
